Better Than Christmas Cookies!

Bake Santa a Cake this Holiday Season

Santa’s got a big job on Christmas Eve - travelling all over the world at warp speed works up quite the appetite. We usually leave him a plate of cookies to keep his energy up for the big night, but this year we’re trying something a little different - we’re baking a cake! This recipe is a favourite of Chef Brandon’s and used to be baked for him by his own Grandma T. Plus, with a cake this tasty, you can bet that Santa won’t have any other choice but to place us on his nice list for next year!

Grandma T's Cake & Sauce Recipe

Sauce

½ cup Brown Sugar (firmly packed)
1 tbsp Cornstarch
½ teaspoon Salt
1 cup Warm Water
1 tbsp Butter
1 teaspoon Vanilla
** for a thicker sauce, add 1tbsp corn starch

Sauce

Method

  1. Mix together sugar, cornstarch, salt and water in a pot.
  2. Over medium heat, stir consistently until sauce is clear.
  3. Remove from heat, stir in butter and vanilla.

2 ¾ cup Cake Flour
1 ½ cups Sugar
¾ cup Shortening
¾ cup Milk
2½ cups Baking Powder
1 teaspoon Vanilla
½ teaspoon Almond Extract
3 Large Eggs

Cake

Method

  1. Preheat oven to 375°
  2. Grease and flour a 9 inch round pan.
  3. Measure all ingredients into a large bowl.
  4. Beat ingredients with a mixer at low speed, scraping often, until well mixed.
  5. Increase speed to high and beat for 2 minutes, occasionally scraping bowl.
  6. Pour batter into pan, bake 45 mins or until toothpick/skewer comes out dry.
  7. Let cool.
  8. Pour sauce over cake and enjoy!
